Valrhona Ganache Recipe

Using Valrhona Tropilia 70% Dark Chocolate

INGREDIENTS

– 560g whipping cream 35%
– 95g Inverted sugar
– 535g TROPILIA 70% Dark Chocolate
– 95g Butter (diced)

Steps
- - - - 1. Melt the Tropilia 70% Dark Chocolate at approximately 45°C
      - 2. Combine cream and sugar, and bring to a boil. Slowly combine with melted chocolate.
      - 3. Using a rubber spatula, whisk until the mixture is smooth and glossy.
      - 4. Use a blender or mixer to continue the mixing process.
      - 5. Once the ganache reaches 35-40°C, add the diced butter and continue to blend.
      - 6. Once butter is fully mixed, leave ganache to cool and set
